Can he read your mind? Why would he, there's nothing there--I mean he can try but he might have difficulty picking up anything.
Can he read your emotions? That's a little like soul perception, so yes he can. She might be able to feel that back, like she's being stared at, but not know what it's coming from.
Can he toss you around using Telekinesis? Yeah

Can he turn you into an inanimate object such as a car? Usually yes, but not while Chaos-Warding Prana is active. After the first time, she'll probably start putting it up whenever she sees him. She can't, however, use CWP to actually undo such an effect after it happens; the Charm has to be active when he tries in order to prevent it.
Can he throw you in a different dimension? Yes, but Chaos-Warding Prana probably works on this too. It depends if it's more of a reality-warpy "snap fingers, you're in another dimension" thing or more like "open portal, shove you in".
Can he lock you within a time loop? (for amusement of course) Probably only while not protected by Chaos-Warding Prana, like the previous answer. Unlike the previous 2, she can probably use CWP to actually break out of a time-loop, by having it active at the time she would get sent back.
Can he read your mind? yup
Can he read your emotions? sure
Can he toss you around using Telekinesis? Tossing around bodily will work fine, but the Freedom Stone hearthstone prevents some other possible applications of telekinesis (such as immobilizing limbs).
Can he see into your character's future? sure why not
Can he teleport you away? yeah probably. Might actually not be prevented by Chaos-Warding Prana, because of weird edge-casey reasons that probably aren't worth the time to fully explain.
(and like Lex, ask for specific instances of anything longer-term)

What I told you before is really the only information we were given on it, in both the cartoon and movie canons. If you can/care to get hold of a copy, the movie is Beetlejuice, a sort of horror/comedy thing by Tim Burton. :D It's awesome!

Zelos would massively squirm and try to divert him by thinking strongly about irrelevant stuff if he realises he's doing it, because he's been trying to hide a lot about himself from everyone in Genessia. Which means yes because that'll be hilarious. Likewise, yes for Midboss. Would he be able to do this over the communicators, or just in person? I'd rather he didn't broadcast what he uncovered to the whole of Genessia (in particular about Zelos) though.
Can he read your emotions? Again, ALL THE SQUIRMING from Zelos (who is a bitter ball of self-loathing deep down), but yes, go ahead. As above though - is this just an in-person thing, or over the communicators? Less worried about this info seeping out, but Genessia-wide broadcasts might need some plotting.
Can he toss you around using Telekinesis? Go right ahead :) Midboss in particular will not be amused, because dammit he can't use his wings to right himself anymore.
Can he see into your character's future? Is this their future in Genessia, or their future in their own canon? Because in Zelos' canon, he's just died so there isn't really any future there (Gabriel is of course welcome to see this). I would rather he didn't read Midboss' canon future, because his canon has multiple endings, and I haven't actually picked which one I want to go with yet (reading ALL the canon options as a sort of ~potential futures~ might be okay though, I guess?). If it's Genessia-future, sure for both, but I'm not sure how that'd work?

Gabriel is notorious for going back and forth in time. So if he ever knows anything about you, it's because he visited you there. And I keep it at, he has to meet you in person to read your characters. So I suppose, the next question would be, are you amenable with suddenly seeing Gabriel inside your apartment?
Also, Gabriel is not stupid enough to divulge any info over the network. Heck, he doesn't even want too many people to know he can read into stuff unless he really 'likes' you. So if he learns anything from you, he'd likely discuss it with you in private.
I think it depends with you if you wish for him to see his canon future. But as for the game future, it would need plotting. Like for example, you can tell me that Midboss is planning to set this bomb at this point in time. Gabriel will talk to Midboss about it and say, that's not a wise idea. Like to counsel him like he did the winchesters.
